"The Dalmore Selected By Daniel Boulud" is the world’s first single malt scotch whisky to be created in collaboration with a Michelin starred chef. Crafted by The Dalmore Master Distiller Richard Paterson and Chef Daniel Boulud, this expression unites the art of whisky making with the world of fine cuisine. Limited to a release of only 1,000 bottles exclusively available in the US, this unique assemblage of aged stocks, drawn from Muscatel, Madeira and Port wine casks, is the perfect complement to fine cuisine, dark Java coffee or bitter chocolate.

The Dalmore 12 Years Old

Launched in late 2008 to replace the previous 12 year old, this single malt from the Dalmore distillery is a toasty, coffee-rich dram with beautifully spice notes and a thick mouthfeel. Very rich for a 12 year old.

Nose: A warm coffee house in Seattle; roasting beans, the oily nuttiness in a fine espresso, there are little notes of malt and cereal and butter from the pastry counter with rich orange from the fruit bowl on the counter.

Palate: Notes of Seville marmalade and triple sec with winter spices and fruitcake. Zesty cocoa and milk chocolate.

Finish: Medium, oranges.

The Dalmore 15 Years Old

The Dalmore 15 year old was first launched in 2007. Matured in matusalem, apostoles and amoroso sherry casks, it proffers all those winter spice, orange zest and chocolate notes characteristic of Dalmore.

Nose: A chocolate orange. Potpourri, perfumed. Fruitcake, sherry.

Palate: Medium, lovely delivery. Zesty orange, Blue Curaçao, chocolate. Winter spice, stem ginger in syrup. Hints of anise and a little hickory.

Finish: Malty barley and smoky espresso.

The Dalmore Cigar Malt Reserve

The Dalmore Cigar Malt Reserve benefits from a judicious selection of aged stocks drawn from casks of three types: American white oak ex-bourbon casks, 30 year old Matusalem oloroso sherry butts and premier cru Cabernet Sauvignon wine barriques.

Bottled at 44% alcohol by volume, the body, structure and character of this extraordinary expression is the perfect complement to a fine cigar.

Nose: Caramel, shortbread, biscuits, coffee and chocolates. Simple, clean and moreish.

Palate: Yet more toffee, caramel edging towards the burnt cinder-toffee side of things. Flamed orange-zest, and perfectly integrated sherry.

Finish: Reasonably simple, Christingles (orange Zest and clove with a touch of cinnamon), more mid-palate than palate-coating.

Overall: Definitely meets the criteria of pairing with a ‘BIG’ cigar.

The Dalmore 18 Years Old

Dalmore's stunning 18 year old Highland malt is as rich, fruity and spicy as you could ever want from a Dalmore. Kudos to Richard Paterson for creating another veritable chocolate orange of a whisky - a surefire hit, and great for the colder months. It is aged for 14 years in American oak, followed by three years in Matusalem sherry butts, before a final year in sherry butts.

Nose: Fruity and spicy with notes of vanilla, orange zest and potpourri, marmalade and sweet milk chocolate. A touch of leather and sultana.

Palate: A delicious fireside dram with notes of chocolate raisins, juicy citrus, stewed fruits, old sherry and pepper.

Finish: A long, fruity finish ending on almond, buttery toffee apples and cocoa.

The Dalmore 1263 King Alexander III

Crafted to honour the act of saving Scotland’s King in 1263, this expression unites six specially selected casks housing spirit of perfect maturity. Whiskies matured in ex-bourbon casks, Matusalem oloroso sherry wood, Madeira barrels, Marsala casks, port pipes and Cabernet Sauvignon wine barriques are brought together in perfect harmony. Each cask gives its own flavour notes, delivering a unique complex single malt whisky revered by connoisseurs.

Nose: Malty and utterly Dalmore. Seville orange zest, Parfait Amour, malty cereal, barley and chocolate. Creamy vanilla fudge, tropical fruit with a vaguely vinous quality.

Palate: Medium, rounded. Winter berries, spice, zesty orange. Liqueurs emerge; Gran Marnier, kirsch and Frangelico.

Finish: Peppery with well-integrated oak and the claret makes a last minute appearance.

The Dalmore Castle Leod

This limited edition bottling celebrates the ancient and historic seat of Clan Mackenzie and is the second in a series crafted by Master Distiller Richard Paterson in homage to Clan Mackenzie.

Castle Leod has been home to the Caberfeidh, Chief of the Clan Mackenzie, sine 1606 and is located just 14 miles from the The Dalmore Distillery.

This classic Vintage 1995 expression was matured initially in American white oak and Spanish sherry wood, before being transferred for a final 18 months to barriques from a legendary 1st cru classe Bordeaux chateau.

The Dalmore 25 Years

A jaw-dropping addition to the Dalmore core range introduced in 2013, the Dalmore 25 Year Old follows the distillery's tradition of being matured in an extensive selection of casks. Initially aged in American white oak, it's then hand-divided into 25 year old Palomino Fino sherry butts and 1980s first-fill bourbon casks. After that, the whiskies are married in bourbon barrels before finally enjoying some time in Tawny Port pipes from Portugal. Phew, what a long journey! The effort pays off though, as the Dalmore 25 Year Old is utterly incredible.

Nose: Fresh vanilla, fig cake, marzipan and chocolate orange.

Palate: More glorious, rich orange with damson and fragrant peach, moving into mango.

Finish: Dark chocolate, gingerbread and lingering, fragrant orange.

Overall: Dalmore have created a superb whisky that we'll be happy to see in their core range year after year.
